Masala tea

Masala is one of the traditional Indian drinks.

The word masala is translated as a mix of spices. There is variety of mixes which are intended for different dishes. And masala is tea with spices. At the basis of this drink is tea, milk, spices and sweetener (honey or sugar). But there isn’t strict recipe and in every home the drink is prepared in its own way.

Masala tea is prepared, as a rule, from black tea. The technology of its brewing can be different. You can brew the tea directly in the milk, you can make tea in water and add milk at the end of the preparation of the drink, or you can add hot milk into the tea with spices that was brewed on water.

Milk for masala tea should be of high fat or it can be even cream.

The essential components of the beverage are sugar or honey. However, during the prolonged heating honey loses its healing properties. The long boiling of sugar in milk gives the drink a caramel taste.

Set of spices which is put into the drink depends on a personal taste. But cardamom presents in the beverage always. But apart from this, also are used fresh or dried ginger, star anise, nutmeg, cinnamon and cloves.

To make this refreshing drink by yourself, you can use this recipe. You have to take one glass of milk and water, 1 tablespoon of black tea, 2 tbsp of sugar and ground spices (a teaspoon of cinnamon, half a teaspoon of cardamom, coriander and cumin, a few peas of black and white pepper, a few pieces of clove, a little bit of nutmeg and a bay leaf).

Put spices into a saucepan, add water, bring to a boil and boil for about a minute, add tea and continue to boil for another minute, then add milk, sugar and a bay leaf, bring to a boil and boil for another minute. When the drink is ready, pour it into the cup through a strainer.

As mentioned above, this is only one of many recipes. And then you can change it according to your taste.

It’s important to remember that the masala tea should be prepared on slow fire otherwise milk may just curl up because there is abundance of spices. In order to mix the tea, you should carefully poured several times from one cup to another. The cup for masala tea has to be rinsed with boiling water, to unlock the full flavor of the drink.
