The flowers of chicory have a shape of a daisy but their color is blue. Chicory grows throughout the central part of Russia. But in many European countries it is grown specifically.
The root of chicory has been used in medicine and cooking for a long time. In Europe they started to make a drink from chicory in the Middle Ages.
The success of the drink is provided not only by its taste, but also by its useful characteristics. The rhizomes of chicory contains of vegetable albumen, pectin, organic acids, B vitamins, vitamin C, potassium and magnesium.
Chicory has polysaccharide inulin (about 60% of the dry weight of rhizomes) this ingredient is well absorbed by the body, which is very effective in diabetes. Aromatic drink helps to dilute and remove gallstones, vasodilatation, improve metabolism and work of heart, strengthens the nervous and immune system.
Chicory normalizes sleep. If you drink chicory in the morning, it helps to cheer up, and if you drink it in the evening it helps to fall a sleep.
However, this drink should be used with caution for people suffering from varicose veins, because chicory is able to expand vessels.
Chicory is often used by people leading a healthy lifestyle as a substitute for real coffee.
Chicory can be used as a supplement to natural coffee, which gives to the drink a distinctive taste and aroma.
To make a drink from roasted chicory you need to put 1 tbsp of powder into 200 ml of hot water, boil for about 3-5 minutes, give the drink a little time to settle and pour through a strainer into the cup. Add sugar, milk or cream according to taste.
To prepare Latvian cold drink from chicory you need to add lemon or orange syrup and apple juice, and if you want a little honey to the drink which was boiled on water.
Take 500 ml of hot water, 2 tsp of instant chicory and add condensed milk according to your taste and tasty drink is ready.
Chicory drink with ginger. Boil chicory drink on water. Prepare the ginger syrup.
Put three teaspoons of sugar to a small tank, pour out 2 tbsp of water, add ground ginger and bring to a boil on low heat to a state of caramel.
Prepared ginger syrup add to the drink from chicory. You can decorate the drink with whipped cream.
If you add chicory to a pastry, especially to the dough for cupcakes, it will bring a pleasant nutty taste.
